Nourish from Within: Swati’s Masala Quinoa Bowl

This week, Swati’s shared one of her clinic favourites: a Masala Quinoa Bowl. It’s bright, nourishing, and deeply satisfying, a perfect reminder that what we eat can be both functional and joyful. Try it for yourself, for brunch, lunch or dinner  - your skin (and taste buds) will thank you.

Masala Quinoa Bowl

Serves 2

Ingredients

  • 1 cup quinoa (rinsed)

  • 1 tsp ghee

  • ½ tsp cumin seeds

  • 1 small onion, finely chopped

  • ½ cup mixed colour peppers, chopped

  • ½ cup chopped broccoli

  • ½ cup edamame beans (shelled)

  • ½ tsp turmeric powder

  • ½ tsp garam masala

  • ½ tsp red chilli flakes (optional)

  • Pink or sea salt, to taste

  • Fresh coriander, chopped (for garnish)

Method

  1. Cook quinoa according to packet instructions and set aside.

  2. Heat ghee in a pan and add cumin seeds; let them splutter.

  3. Add onions and sauté until golden brown.

  4. Stir in turmeric, salt, garam masala, and red chilli flakes; cook for 30 seconds until aromatic.

  5. Add peppers, broccoli, and edamame beans. Sauté for 2–3 minutes until tender but still vibrant.

  6. Add cooked quinoa and toss gently to combine.

  7. Turn off the heat and finish with a generous handful of fresh coriander.

Serve hot - with mixed salad leaves on the side if you like a little crunch.
